For potato filling (vada):
3 Medium Souz Potatoes (boiled and mashed)
1 teaspoon chopped green chili
1 teaspoon chopped ginger
Half a teaspoon cumin
4 teaspoons turmeric powder
A pinch of asafoetida
Taste salt
Oil to roast and fry
For solution:
½ cup gram flour
4 teaspoons turmeric powder (if not already in filling)
Taste salt
Water as required for smooth batter
To make:
Pav bun (as many serving as)
Green coriander chutney
Tamarind
Optional: Green chili fried to extra taste
How to make:
Prepare potato mix:
1. Heat a little oil in a pan. Add cumin, asafetida, chopped ginger and green chili. Fry till the fragrance comes.
2. Add mashed potatoes, turmeric and salt and mix. Cook for a while till the fragrance comes. Then take off the heat and let the mix cool slightly.
For batter:
1. Make gram flour batter. Make a smooth but slightly thick batter by mixing gram flour, salt and turmeric (if using) in water, which is right to coat.
Give and fry the vands:
1. divide the mixed potato mixes into small, equal size parts. Dip each one in the solution and apply it completely.
2. Heat oil in a deep pan. Fry the drowned Varas in the batter till it becomes crispy and golden. To remove extra oil, take them out on a paper towel.
Prepare Vada Pav:
1. Cut each pav bun in half, keep it full.
2. Apply coriander chutney and tamarind sauce on both sides. Keep hot vada inside the bun.
3. If you want, you can also add fried green chillies to taste sharp. Serve immediately.
